INGREDIENTS
1 tablespoon Vital Farms Butter
12 Vital Farms PastureRaised Eggs
Salt and Pepper to taste
1 red bell pepper, diced
¼ cup green onions, sliced
1/2 cup cheddar cheese, divided
INSTRUCTIONS
1. Preheat oven to 350°F and grease a 12-cup muffin tin with Vital Farms Butter.
2. In a large bowl, whisk 12 eggs. Season with salt and pepper.
3. Stir in bell pepper, onions, and half the cheddar cheese.
4. Transfer egg mixture to muffin tin and top with remaining cheese.
5. Bake for about 20-25 minutes until egg is completely set.
