Tortilla Egg Wrap
This is a quick and easy go-to meal when you need a last minute meal out of things you probably already have in the fridge.
Ingredients
- 2 Vital Farms Eggs
- salt and pepper
- 2-3 tablespoons cheddar cheese, grated
- 1 tortilla
- 1 handful greens or fresh, tender herbs
- 1/2 cup roughly chopped vegetables such as tomatoes, bell peppers, onions, avocado or mushrooms
Instructions
- In a small bowl, whisk the eggs up until homogenous. Season with salt and pepper.
- Heat a medium skillet over medium-low heat. When warm, add in the eggs and spread them in an even layer. Let them gently cook, undisturbed until just starting to set slightly.
- Sprinkle the cheese evenly over the whole surface then place the tortilla on top and flip.
- While the tortilla is toasting, add the greens or herbs and chopped vegetables to one side.
- Remove the egg tortilla from the pan and gently roll it up, keeping the toppings inside. Slice in half and enjoy!
