In a small bowl, whisk the eggs up until homogenous. Season with salt and pepper.
Heat a medium skillet over medium-low heat. When warm, add in the eggs and spread them in an even layer. Let them gently cook, undisturbed until just starting to set slightly.
Sprinkle the cheese evenly over the whole surface then place the tortilla on top and flip.
While the tortilla is toasting, add the greens or herbs and chopped vegetables to one side.
Remove the egg tortilla from the pan and gently roll it up, keeping the toppings inside. Slice in half and enjoy!
