Peppermint Chip Cookies

The holidays are a beautiful time to #BakeItForward. These cookies are perfect for holiday baking, and I am so excited to wrap them up and share them with loved ones!

Makes 12 cookies


  • 1/2 cup Vital Farms Unsalted Butter room temperature
  • 1 Vital Farms Egg
  • 11/2 cups King Arthur flour
  • 1/2 cup coconut sugar
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of sea salt
  • 3/4 cup white chocolate chips
  • 3/4 cup dark chocolate chips
  • 5 crushed candy canes


  • Preheat oven to 350˚F. Line baking sheet with parchment paper.
  • Using a hand mixer, cream butter, sugar and brown sugar until nice and creamy. Add in vanilla and egg. Beat until combined.
  • In a separate bowl, whisk together flour, sea salt and baking soda. Mix dry ingredients into wet ingredients until combined.
  • Fold in chocolate chips and candy canes.
  • Use a cookie scoop and line cookies on baking sheet, careful to leave room for cookies to spread. Bake for 10-12 minutes or until cookies are slightly golden. Let sit for a few minutes before transferring to a cooling rack. Enjoy!
