Caramelized Onion, Rosemary and Thyme Compound Butter
A delicious way to finish grilled steaks, sautéed mushrooms, and creamy mashed potatoes. Or, simply slater it onto toasty bread.
Ingredients
- 1 cup plus 2 tablespoons Vital Farms Salted Butter, room temperature
- 1 tablespoon olive oil
- 1 medium yellow or white onion, finely chopped
- kosher salt
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
Instructions
- Heat a medium skillet over medium-low heat.
- Add 2 tablespoons of butter and the olive oil to the skillet and allow the butter to melt. Then, add in the onions. Season with salt and cook, stirring occasionally, until onions are caramelized and jammy, about 30-40 minutes.
- Transfer to a medium bowl to cool completely.
- Add the remaining cup of butter and herbs to the bowl, along with the onions. Using a fork, wooden spoon, or rubber spatula, mash mixture together until fully incorporated.
- Transfer mixture to a piece of parchment or wax paper and shape into a rough log. Roll it up and twist both ends tightly to compact the mixture.
- Refrigerate until firm. Then, slice and enjoy.
