Avocado Bacon Ranch Deviled Eggs
These deviled eggs pack a flavorful punch with zesty ranch and creamy avocado topped with crispy bacon. Perfect for brunch, game day or a party!
Ingredients
- 12 Vital Farms eggs
- 1 avocado
- 1 teaspoon lemon juice
- 1/4 cup mayonnaise
- 2 teaspoons ranch seasoning
- 4 pieces bacon, cooked and roughly chopped
- salt and pepper, to taste
Instructions
- Fill a medium saucepan about halfway with water and bring to a boil over medium heat. Add in the eggs using a slotted spoon and boil for 10 minutes.
- Prepare an ice bath by filling a medium bowl with ice and water. Add the boiled eggs to the ice bath. When cool to the touch, peel, pat dry and set aside.
- Cut eggs in half lengthwise and pop the yolks out, adding them to a separate bowl.
- Cut the avocado in half, scoop out the flesh and add to the bowl with the egg yolks. Add in the lemon juice and use a fork to smash the two together until mostly smooth and well combined.
- Season mixture to taste with salt and pepper and add in the mayonnaise and ranch seasoning. Mix until well combined.
- Spoon dollops of the mixture into the egg white halves. Top each with chopped bacon.
