Avocado Bacon Ranch Deviled Eggs

These deviled eggs pack a flavorful punch with zesty ranch and creamy avocado topped with crispy bacon. Perfect for brunch, game day or a party!

Makes 24 deviled eggs

Ingredients  

  • 12 Vital Farms eggs
  • 1 avocado
  • 1 teaspoon lemon juice
  • 1/4 cup mayonnaise
  • 2 teaspoons ranch seasoning
  • 4 pieces bacon, cooked and roughly chopped
  • salt and pepper, to taste

Instructions 

  • Fill a medium saucepan about halfway with water and bring to a boil over medium heat. Add in the eggs using a slotted spoon and boil for 10 minutes.
  • Prepare an ice bath by filling a medium bowl with ice and water. Add the boiled eggs to the ice bath. When cool to the touch, peel, pat dry and set aside.
  • Cut eggs in half lengthwise and pop the yolks out, adding them to a separate bowl.
  • Cut the avocado in half, scoop out the flesh and add to the bowl with the egg yolks. Add in the lemon juice and use a fork to smash the two together until mostly smooth and well combined.
  • Season mixture to taste with salt and pepper and add in the mayonnaise and ranch seasoning. Mix until well combined.
  • Spoon dollops of the mixture into the egg white halves. Top each with chopped bacon.
