Veggie & Cheese Egg Bites

Ingredients
- 1 tablespoon Vital Farms Butter
- 12 Vital Farms PastureRaised Eggs
- Salt and Pepper to taste
- 1 red bell pepper diced
- ¼ cup green onions sliced
- 1/2 cup cheddar cheese divided
Instructions
- Preheat oven to 350°F and grease a 12-cup muffin tin with Vital Farms Butter.
- In a large bowl, whisk 12 eggs. Season with salt and pepper.
- Stir in bell pepper, onions, and half the cheddar cheese.
- Transfer egg mixture to muffin tin and top with remaining cheese.
- Bake for about 20-25 minutes until egg is completely set.
