Brunch can be a challenge when you’re gluten-free, but these spiralized butternut squash waffles are a delicious way to rev up your weekend!
Gluten-Free Spiralized Butternut Squash Waffles
Heat Waffle Iron.
Place a large skillet over medium heat and coat with Coconut Oil cooking spray.
Sauté butternut squash noodles. Sprinkle pinch of salt and carefully turn noodles around in the pan until softened, about 6-8 minutes.
Transfer softened butternut squash noodles to large bowl
Add Nutmeg, Cinnamon, Allspice, and Ginger powders and mix in with noodles to combine.
Beat egg in small bowl and add beaten egg to noodles and toss to coat thoroughly
Coat heated waffle iron grill with Coconut Oil cooking spray and add coated butternut squash noodles.
Cook waffle according to waffle iron's instructions and settings.
Serve with maple syrup (or your favorite sweetener), a sunny-side up Vital Farms Egg, and your favorite breakfast meat! (We love Applegate Uncured Sunday Bacon)
