Latke Breakfast Board
Having friends or family over for breakfast or brunch? Delight them with a spread of hot, crispy latkes and all the fixin's.
Ingredients
- 4 large russet potatoes
- 1 large white or yellow onion
- 3 Vital Farms Eggs, lightly whisked
- 1/2 cup potato starch
- 2 teaspoons salt
- 1/2 teaspoon ground pepper
- neutral oil, such as avocado
- flaky salt, for serving
Instructions
- Peel the potatoes.
- Grate the potatoes and onion on a box grater on the side with large holes.
- Add the potato and onion mixture to a large kitchen towel, wrap up into a bundle and squeeze out as much excess water as you can.
- Transfer the mixture to a large bowl and add in the eggs, potato starch, salt and pepper. Use your hands to mix thoroughly until everything is well combined and holds together when you gently squeeze some in your hands.
- Heat a large skillet over medium-high heat. Add in enough oil to fill the skillet up about 1/2 an inch.
- Once the oil is shimmering, use two spoons to scoop 1/4 cup dollops of the potato mixture into the skillet, spreading into an even round layer. Work in batches so as not to crowd the pan. Cook for about 1-2 minutes on each side, until deep golden brown and crispy. Use a slotted spatula to transfer the latkes to a wire rack.
- Sprinkle with flaky salt and serve warm.
- To create a latke breakfast board, arrange the latkes on a large serving platter or charcuterie board along with desired toppings such as jammy eggs, finely chopped herbs such as dill and chives, crème fraîche or sour cream, applesauce, smoked salmon, pickled red onion, capers, everything bagel seasoning, and lemon wedges.
