Creamsicle Mug Cake

A little treat for when you're in desperate need of something sweet in a snap.

Makes 1 mug cake

Ingredients

  • 1 tablespoon orange juice
  • 1 tablespoon milk, dairy or non-dairy both work
  • 1 teaspoon orange zest
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons Vital Farms Unsalted Butter, melted
  • 2 tablespoons granulated sugar
  • 1/4 cup all-purpose flour
  • pinch of salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda

glaze

  • 1 teaspoon orange juice
  • 3 tablespoons powdered sugar
  • pinch of salt
  • orange zest, for garnish

Instructions 

  • In a small bowl, whisk together the orange juice, milk, zest, vanilla, butter and sugar. Add in the flour, salt, baking powder and baking soda and whisk again to combine everything. Transfer batter to a mug or small ramekin dish. 
  • Place in the microwave and cook for about 1- 1/2 minutes, until the cake has risen and is no longer jiggly.
  • Allow the cake to cool slightly and make the glaze in the meantime by whisking together the orange juice, powdered sugar, and salt in a small bowl. Drizzle the glaze over the cake and top with orange zest, if you’d like.
