Garlic and Herb Butter Swim Biscuits
These tender, fluffy biscuits are a variation originating in the south in which the biscuits are quite literally swimming in butter! They're crispy on the outside, fluffy and tender on the inside, full of fresh garlic and herb flavor, and perfect alongside any meal.
Ingredients
- 1/2 cup Vital Farms Unsalted Butter
- 2 cloves garlic
- 1 teaspoon fresh parsley, finely chopped
- 1 teaspoon fresh chives, finely chopped
- 1 teaspoon fresh thyme, finely chopped
- 1 teaspoon fresh rosemary, finely chopped
- 2 1/2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 cups buttermilk
- 1 Vital Farms Egg, lightly beaten
Instructions
- Preheat oven to 450° F. Add the stick of butter to an 8×8-inch baking dish and place in the oven while it preheats so the butter melts.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add in the buttermilk and egg and stir to combine.
- Remove the baking pan from the oven once the butter has melted and grate the garlic over the butter. Sprinkle the herbs over the top. Spoon about a tablespoon of the mixture into a small bowl and set aside.
- Add the batter on top of the butter and spread in an even layer. Use a knife to score the batter into 9 even squares. Bake for about 20-25 minutes, until deep golden-brown. Brush the top with the reserved herb butter. Serve warm.
