Snickerdoodle Granola Bars

A granola bar that tastes like a snickerdoodle cookie?? Yes, please! Make a batch of these at the beginning of the week and have a tasty and healthy snack within arm's reach anytime the kiddos ask for a snack.

Ingredients  

  • 2 Vital Farms Eggs
  • 1/2 cup Vital Farms Unsalted Butter melted and cooled slightly
  • 1/4 cup maple Syrup
  • 1 teaspoon vanilla Extract
  • 2 cups old-fashioned oats
  • 2 1/2 teaspoons ground cinnamon
  • 1/2 cup roasted almonds roughly chopped
  • 1/2 cup dates pitted and roughly chopped
  • 1/4 cup flax meal
  • 1/4 cup chia seeds
  • 1/2 teaspoon salt
  • 2 tablespoon raw sugars

Instructions 

  • Preheat oven to 350° F. Line an 8-inch square baking pan with parchment and set aside.
  • In a large bowl, whisk together the eggs, melted butter, maple syrup, and vanilla extract. Add in the oats, 2 teaspoons of cinnamon, almonds, dates, flax meal, chia seeds, and salt. Mix everything together well then add the mixture into the prepared baking pan and press into an even layer.
  • Mix together the raw sugar and remaining 1/2 teaspoon of cinnamon. Sprinkle evenly over the granola bar mixture.
  • Bake for about 20-25 minutes, until light golden-brown. Allow to cool completely then remove from the pan and slice into 8 bars and enjoy.
