Roasted Rhubarb Honey Butter
Rhubarb is often welcomed as a strawberry sidekick, but it's equally comfortable flying solo! This Rhubarb honey butter is the perfect balance of sweet and tart. Spread it on everything from toast to biscuits and even your morning stack of pancakes.
Ingredients
- 1/2 cup Vital Farms Unsalted Butter (room temperature)
- 1/2 pound rhubarb (washed and roughly chopped)
- 1/4 cup honey
- 1/4 teaspoon kosher salt
Instructions
- Preheat oven to 400 F.
- Combine rhubarb and honey in a baking dish and toss to combine.
- Roast for 20 minutes, until tender.
- Allow to cool then puree by pulsing in a food processor, blender or using an immersion blender.
- Add butter, salt and puree to a stand mixer fitted with a whisk attachment and whip together until smooth and combined.
- Spread on toast, biscuits, french toast, or pancakes!
