1. On Toast
Sometimes simplicity = perfection! All you need is some good buttered toast and a sprinkle of herbs!
INGREDIENTS
- Vital Farms Eggs, scrambled
- piece of sourdough toast
- Vital Farms Salted Butter
- fresh chives, finely chopped
INSTRUCTIONS
1 .Butter toast and add scrambled eggs on top. Sprinkle with chives.
2. Breakfast Bowl
Scrambled eggs are the base of this tasty and customizable savory breakfast bowl!
INGREDIENTS
- Vital Farms Eggs, scrambled
- roasted potatoes
- breakfast sausage, cooked
- sauteéd kale
- avocado, cubed
- fresh, tender herbs such as dill or chives, finely chopped
- hot sauce of choice
INSTRUCTIONS
- Add potatoes, sausage, and kale to a bowl. Top with avocado and the with eggs and a sprinkling of herbs on top. Drizzle with hot sauce, if desired and enjoy.
3. Biscuit Sandwich
This sweet and salty sandwich makes a perfect fancy brunch meal or luxurious weekend breakfast.
INGREDIENTS
- Vital Farms Eggs, scrambled
- biscuits
- sliced ham
- arugula
- fig jam
INSTRUCTIONS
- Split the biscuit in half and spread the inside of each with fig jam.
- Add arugula to the bottom half of the biscuit then top with a piece of ham and the scrambled eggs. Add top half of biscuit.
4. Breakfast Taco
Whip up a batch of these tacos with your favorite salsa, protein, and your choice of tortilla!
INGREDIENTS

- flour or corn tortillas, warmed or griddled
- chorizo or other protein, cooked
- avocado, cubed
- salsa of choice
- fresh cilantro, roughly chopped

- Add the chorizo and scrambled eggs to a tortilla. Top with avocado, salsa, and cilantro.
5. In A Pita
Try this twist breakfast by loading up a pita with eggs and the flavors of the Mediterranean.
INGREDIENTS
- Vital Farms Eggs, scrambled
- pita
- tzatziki
- tomatoes, roughly chopped
- red onion, roughly chopped
- fresh parsley, roughly chopped
- feta, crumbled
INSTRUCTIONS
- Half the pita and stuff with eggs. Top with tomatoes, red onion, feta, parsley, and tzatziki.
6. Breakfast Pastry POcket
This is a great meal to prep ahead and store in the freezer for a tasty breakfast to have on hand any time.
INGREDIENTS
- Vital Farms Eggs, scrambled
- 2 sheets puff pastry, thawed and cold
- sharp cheddar cheese, grated
- breakfast sausage, cooked
INSTRUCTIONS
- Preheat oven to 350° F.
- Lay puff pastry out in a single layer and cut into 2 x 4-inch rectangles.
- Top with cheese, sausage, and scrambled eggs, leaving a ½-inch border around all sides.
- Brush with egg wash and place another rectangle of dough on top, pressing down to adhere. Crimp edges with a fork.
- Brush tops with egg wash and cut a few ventholes on the top to allow steam to escape. Bake on a parchment-lined baking sheet for 20-25 minutes, until golden brown and puffed.
