Caper Lemon Dill Compound Butter

A bright, tangy and herbaceous butter—delightful when served over slow-roasted salmon or crisp green beans.

Makes 16 servings


  • 1 cup Vital Farms Salted Butter, room temperature
  • Zest of 1 large lemon
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh dill, finely chopped


  • Add the butter, lemon zest, capers, and dill to a medium bowl and using a fork, wooden spoon, or rubber spatula, mash mixture together until fully incorporated.
  • Transfer mixture to a piece of parchment or wax paper and shape into a rough log. Roll it up and twist both ends tightly to compact the mixture.
  • Refrigerate until firm. Then, slice and enjoy.
