Easy Breakfast Steak Tacos

Tender steak, sunny-side-up eggs, and fresh toppings come together in these easy breakfast tacos for a hearty, flavorful start to the day.

Ingredients

  • 1 pound skirt steak
  • 1 tablespoon steak seasoning
  • 2 tablespoons olive oil
  • 6 flour tortillas
  • 6 Vital Farms eggs
  • ½ small red onion, thinly sliced
  • ¼ cup fresh cilantro, roughly chopped
  • 4 radishes, thinly sliced
  • ½ cup cotija cheese, crumbled
  • ¾ cup salsa verde

Instructions

  1. Pat the skirt steak dry and season generously with steak seasoning.
  2. Heat a large skillet over medium-high heat and add 1 tablespoon of the olive oil. Add the steak and cook for about 3–4 minutes per side, or until browned and medium doneness is achieved. Transfer to a cutting board and let rest for 5 minutes. Thinly slice against the grain.
  3. While the steak rests, warm the tortillas in a dry skillet over medium heat for about 30 seconds per side.
  4. Reduce the heat to medium, add the remaining tablespoon of olive oil, and fry the eggs sunny-side up, working in batches as needed, until the whites are set and the yolks are still runny.
  5. Divide the sliced steak among the tortillas and top each with a fried egg. Finish with red onion, radishes, cilantro, cotija cheese, and salsa verde. Serve immediately.
