Butter Masala Sauce
Need a head start on dinner? This versatile sauce made with salted butter and warm spices is the perfect compliment to any protein. Think grilled salmon, crispy chickpeas, or juicy meatballs! Keep a batch on hand when you need to throw a quick yet flavor-packed meal together!

Ingredients
- 3 tablespoons Vital Farms Salted Butter
- 1/2 small white onion, finely diced
- 2 teaspoons fresh ginger, finely grated
- 2 cloves garlic, finely grated
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 teaspoon garam masala
- 2 tablespoons tomato paste
- 3/4 cup canned crushed tomatoes
- zest of 1 large lime
- 1/2 cup heavy whipping cream
- 3 tablespoons greek yogurt
- 1 tablespoon fresh lime juice
- salt and pepper, to taste
Instructions
- In a medium saucepan, melt the butter over medium-high heat. Add the onion and stir occasionally, until golden.
- Add the ginger and garlic and cook until fragrant. Next add the cumin, coriander and garam masala. Stir to combine.
- Add the tomato paste and cook for about two minutes. Add the crushed tomatoes, lime zest, and heavy cream. Turn the heat down to low and simmer for about 5 minutes. Stir in the yogurt, lime juice, salt, and pepper.
- Pair the sauce with any protein you'd like such as baked salmon, crispy baked chickpeas, or even meatballs.
This sauce can be used immediately or stored in the refrigerator in an airtight container for up to three days.
