All the gooey, toasty magic of a campfire s’more with no fire needed. This easy one-skillet dessert is packed with chocolate chips, graham crackers, and marshmallows, then baked to golden perfection. Best served warm with a scoop of vanilla ice cream on top!

Ingredients

  • ½ cup salted butter, room temperature
  • 1 tablespoon coconut oil, melted
  • ¼ cup granulated sugar
  • ⅔ cup brown sugar
  • 1 Vital Farms Egg, room temperature
  • 1 tablespoon heavy cream, room temperature
  • 1 teaspoon vanilla extract
  • 1⅔ cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup dark chocolate chunks
  • 3 sheets graham crackers, lightly crumbled
  • ½ cup mini marshmallows
  • finishing salt, to garnish
  • vanilla ice cream, to serve

Instructions

  1. Preheat the oven to 350° F.
  2. In a large bowl whisk together the flour , baking soda, baking powder , and salt. Set aside.
  3. In a second large bowl add the butter, coconut oil, granulated sugar, and brown sugar. Use a handheld mixer to cream ingredients together for two minutes.
  4. Then add the egg, vanilla, and heavy cream to the butter mixture. Mix with the handheld mixer until ingredients are combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients until everything is incorporated.
  6. Gently fold in the chocolate chips, graham crackers, and half of the marshmallows.
  7. Transfer the dough to an 8-inch greased skillet, making sure to smooth out evenly.
  8. Add the remaining half of the marshmallows on top by gently pressing into the dough.
  9. Bake for about 28 to 30 minutes, then add finishing salt once removed from the oven. Allow to cool for 15 minutes before serving. Best enjoyed with vanilla ice cream!
