Snickerdoodle Granola Bars
Ingredients
Makes 8 servings
- 2 Vital Farms Eggs
- ½ cup unsalted butter, melted and cooled slightly
- ¼ cup maple Syrup
- 1 teaspoon vanilla Extract
- 2 cups old-fashioned oats
- 2½ teaspoons ground cinnamon
- ½ cup roasted almonds, roughly chopped
- ½ cup dates, pitted and roughly chopped
- ¼ cup flax meal
- ¼ cup chia seeds
- ½ teaspoon salt
- 2 tablespoon raw sugars
Instructions
- Preheat oven to 350° F. Line an 8-inch square baking pan with parchment and set aside.
- In a large bowl, whisk together the eggs, melted butter, maple syrup, and vanilla extract. Add in the oats, 2 teaspoons of cinnamon, almonds, dates, flax meal, chia seeds, and salt. Mix everything together well then add the mixture into the prepared baking pan and press into an even layer.
- Mix together the raw sugar and remaining 1/2 teaspoon of cinnamon. Sprinkle evenly over the granola bar mixture.
- Bake for about 20-25 minutes, until light golden-brown. Allow to cool completely then remove from the pan and slice into 8 bars and enjoy.
