Salted Butter Cookies
Celebrate every baker's favorite ingredient with rich salted butter cookies — golden and snappy with just the right amount of salt. These cookies are easy to make and only need a few key ingredients to really sing.

Ingredients
- 1 cup Vital Farms Salted Butter, room temperature
- 1 cup powdered sugar
- 4 Vital Farms egg yolks, room temperature, separated
- 3 cups all-purpose flour
- 2 teaspoons flaky salt
Instructions
- Add the butter and powdered sugar to the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until the butter and sugar are well incorporated and light and fluffy, about one minute.
- Add 3 egg yolks to the butter mixture and mix again until combined.
- Add the flour and salt and mix again until fully incorporated.
- Place the dough between two large sheets of parchment, spreading as evenly as you can. Gently roll the dough out into about a 1/4-inch thickness. Place the dough on a baking sheet and chill in the fridge for at least one hour, until firm.
- Preheat the oven to 350 °F. Use a 2-inch round cookie butter to cut out rounds. Place them on a parchment-lined baking sheet about 2 inches apart. Repeat with the rest of the dough, re-rolling the scraps as necessary.
- Add the remaining egg yolk to a small bowl along with a splash of water. Whisk to combine. Brush the egg wash on each cookie. Take a fork and drag the tines lightly through the surface of the cookie in one direction, then again in the opposite direction to make a crosshatch pattern. Bake the cookies for about 15 minutes, until golden-brown. Cool completely before enjoying.
