  1. Place a 12 inch cast iron skillet in oven and set to 450 degrees F.
  2. In a medium sized bowl, stir flour, nutmeg, cinnamon and salt together. Then add eggs, vanilla extract, milk and 2 tbsp. of melted butter. Whisk well.
  3. Reduce heat to 425 F and carefully remove cast iron from oven. Melt the remaining 1 tbsp. in hot skillet and coat. Pour batter in skillet and return to oven as quickly, and safely, as possible.
  4. Bake 12-14 minutes until edges are golden brown and center is puffy. Sift powdered sugar all over.
  5. Serve hot and enjoy.
