Scrambled Egg + Sweet Potato Taco
Taco Tuesday is always something to celebrate, and we've put together a delicious vegetarian scrambled egg and sweet potato taco recipe with some of our favorite Austin-based brands Veggie Noodle Co., Siete Foods, and Yellowbird Hot Sauce!

Instructions
  1. Whisk 4 eggs in a glass bowl and set aside. Warm the tortillas over very low heat on top of a skillet, until ready to serve.
  2. Take 1 tbsp of butter and put in a separate skillet over low heat
  3. Once the skillet is well heated, add the beaten egg and start lightly scramble the eggs into the butter with a spatula until egg curds are well formed and set. Turn off heat, and place scrambled eggs in a warm pan. Rinse skillet and put back on the stove.
  4. Add avocado oil to skillet and put over Medium-Low heat
  5. Once heated, take sweet potato spirals and sauté lightly until softened. Add salt, pepper, and desired seasonings to taste.
  6. Take warmed tortilla and plate the taco in this order: scrambled eggs, sautéed sweet potato spirals, black beans, corn, white onion, and garnish with cilantro and serrano hot sauce. Enjoy!
