  1. Take one egg and separate egg yolk from the white. Place egg yolk in a clean mixing bowl.
  2. Add dijon mustard, vinegar, lemon juice, salt and pepper to bowl and gently whisk into the egg yolk.
  3. Introduce a thin, steady stream of avocado oil into the mixing bowl and start whisking it into the egg yolk mixture. Continue whisking until the mixture forming into an emulsion.
  4. Serve with your favorite veggies
