Potato Chip Omelette

Our take on the iconic omelette inspired by FX's The Bear. Use this legendary technique to achieve the perfectly silky, cheese-filled omelette.

Makes 1 omlette

Ingredients  

  • 3 Vital Farms Eggs
  • 1 tablespoon Vital Farms Salted Butter, plus more for serving
  • goat cheese
  • fresh, seasonal herbs (chives, parsley, basil, oregano, dill), finely chopped
  • a handful sour cream & onion ruffled potato chips, crushed
  • black pepper, freshly ground

Instructions 

  • Place a fine mesh sieve over a small bowl. Crack three eggs into the sieve and beat them with a fork until completely strained into the bowl. 
  • Heat the butter in a skillet over medium-low heat until melted.
  • Pour the eggs into the skillet and vigorously shake the pan.
  • Cook, undisturbed, until the top of the omelette is set.
  • Spoon a line of goat cheese down the center of the omelette.
  • Run the spatula along the sides and gently roll the omelette it into a cylinder.
  • Tilt the pan and roll the omelette off and onto a plate, seam side down.
  • Smother the top of the omelette with extra butter. Garnish with fresh herbs, crushed sour cream & onion chips, and freshly ground pepper.

No goat cheese? No problem! Sub cream cheese or Boursin for the same soft, creamy texture.
