Homemade Pasta

Making homemade fresh pasta is easier than you think and definitely worth the extra effort. Use this base recipe for creating any pasta shape you'd like, from tagliatelle shown here to hand-rolled short-cut shapes and even filled varieties like ravioli. And even better: it doesn't require any special tools or equipment.

Makes 4 servings

Ingredients  

  • 1 1/4 cups all-purpose flour, plus more for kneading, if necessary
  • 3 Vital Farms Eggs

Instructions 

  • Pour the flour out onto your work surface. Make a well in the center where you’ll add the eggs, making sure the sides are tall enough to contain them.
  • Crack in two whole eggs and add one egg yolk. Use a fork to gently whisk and break up the eggs then slowly start scraping some flour from the sides and mixing it into the eggs, being careful not to knock the flour wall down.
  • Once the mixture reaches a paste consistency and is thick enough to hold its shape, mix in the rest of the flour with your hand.
  • Knead the mixture until all the flour has been incorporated. Continue kneading for about 7-10 minutes, until the dough is smooth and the surface springs back when you poke it.
  • Wrap the dough in a damp cloth and let it rest on the counter for about 30 minutes.
  • Proceed with rolling the dough into pasta sheets with a pasta maker or rolling pin and cut into desired shapes.
