High-Protein Cottage Cheese Waffles
These waffles aren't just pretty, they're packed with protein too! Add these to your meal-prep list or enjoy them fresh and warm with your favorite seasonal fruit and a drizzle of maple syrup.

Ingredients
- ¾ cup all-purpose flour
- ½ cup + tablespoom whole grain rolled oats
- 1 teaspoon baking powder
- ⅛ teaspoon fine-grain sea salt
- 3 Vital Farms Eggs
- 1 cup cottage cheese
- ½ cup milk of choice
- 2 tablespoon real maple syrup
- 2 teaspoon vanilla extract
Instructions
- Combine all ingredients into a blender, and process until smooth.
- Heat a waffle iron.
- Spray with avocado oil.
- Pour 1/3 cup of batter into the center of the waffle iron.
- Cook for 3-5 minutes or until golden and cooked through.
- Repeat steps 3-5 with remaining batter.
- Serve with syrup and fruit of choice.
