High-Protein Cottage Cheese Waffles

These waffles aren't just pretty, they're packed with protein too! Add these to your meal-prep list or enjoy them fresh and warm with your favorite seasonal fruit and a drizzle of maple syrup.

Makes 8 waffles

Ingredients  

  • ¾ cup all-purpose flour
  • ½ cup + tablespoom whole grain rolled oats
  • 1 teaspoon baking powder
  • teaspoon fine-grain sea salt
  • 3 Vital Farms Eggs
  • 1 cup cottage cheese
  • ½ cup milk of choice
  • 2 tablespoon real maple syrup
  • 2 teaspoon vanilla extract

Instructions 

  • Combine all ingredients into a blender, and process until smooth.
  • Heat a waffle iron.
  • Spray with avocado oil.
  • Pour 1/3 cup of batter into the center of the waffle iron.
  • Cook for 3-5 minutes or until golden and cooked through.
  • Repeat steps 3-5 with remaining batter.
  • Serve with syrup and fruit of choice.
