Heirloom Tomato Pesto Grilled Cheese
This isn’t your average grilled cheese. Juicy heirloom tomatoes, vibrant basil pesto, and melty mozzarella come together between two slices of golden, buttery bread. It's bursting with summer flavor—comfort food with a fresh, garden-grown twist.

Ingredients
- 1 tablespoon Vital Farms Unsalted Butter
- sourdough bread sliced
- pesto to spread
- 4-6 slices of provolone cheese
- 1 heirloom tomato sliced
- 2-3 fresh basil leaves
Instructions
- Spread the pesto on the inside of the two sourdough bread slices.
- Place at least two slices of provolone cheese on one side, followed by tomato slices, basil leaves, and the remaining cheese. Top with the other slice of bread.
- Add Vital Farms Unsalted Butter to a skillet on medium heat. Once the butter is melted add the assembled sandwich and cover with a lid.
- Cook until the bottom slice begins to brown. Flip the sandwich and cover with a lid. Cook until the second side is golden brown and the cheese is melted.
- Immediately slice in half and enjoy.
