Fried Eggs in Zucchini Nests
Not sure what to do with all your garden's Summer zucchini bounty? Grab some and whip up this tasty breakfast!

Ingredients
- 1 medium zucchini
- 1/3 cup parmesan cheese
- salt and pepper
- 1 tablespoon Vital Farms Unsalted Butter
- 4 Vital Farms Eggs
Instructions
- Shred the zucchini using a zoodler, box grater, or vegetable peeler into long, thin shreds. Add to a bowl and combine with the parmesan cheese. Season with salt and pepper.
- Heat a large skillet over medium heat. Add the butter and once melted, add the zucchini into four small piles in the skillet, leaving a little space in between each.
- Let them cook for just a minute or two, until the cheese just starts to melt. Crack an egg on top of each nest, season with salt and pepper, and place a lid on top. Let the eggs cook until the whites have set and the yolks are still runny, about 5 minutes or so.
- Transfer nests to a plate and enjoy.
